Requirements
• Degree or Certification in hospitality or equivalent
• Previous experienced in similar job role or minimum of 20 years Food and Beverage experience with working experience in 5-star standard hotels
• Excellent verbal communication in English, Cantonese and Mandarin
• Able to multi-task and work in a fast-paced environment
• Strong customer service orientation
• Proficiency in Microsoft Office
Responsibilities
• To co-ordinate all phases of restaurants / group meeting / banquet functions / culinary and stewarding Ops held in the hotel; planning and menu selection
• Achieve budgeted food sales, beverage sales, labour costs and profitability
• Timely analysis of Food and Beverage prices in relation to competition and participation and input towards Food and Beverage marketing activities
• To co-ordinate with all large groups meeting / banquet planners their specific group requirements with the services & facilities offered. This includes proposals, contracts, estimated and actual function statements, with banquet or conferences, the Chef is to be included in food related discussions
• Participation in Manager on duty shifts as required
• Assure bar inventory for functions, including opening and closing inventories, accurate bar summaries and cash deposits are prepared
• Assure the ordering and purchasing of beer, wine, liquor, premix canisters and canned soft for Food and Beverage and vending
• Consistent check of Restaurants, Bars, Banquet Food and Beverage quality, Banquet services and presentation
• Work with the Executive Chefs, Executive Sous Chef, Chief Baker, Executive Chief Steward, Assistant Director of F&B, Executive Managers, Beverage Manager, Sommelier and Outlet Managers to ensure all arrangements and details are dealt with
• Responsible for staff training and development and to achieve the services that exceeds expectations
• Perform other job related duties as requested
